Herb's Chili

Ingredients

  • 3 slices smoked bacon, cut into 1/4-inch pieces
  • 3 cloves garlic, finely chopped
  • 1 medium onion, finely chopped
  • 1 small red bell pepper, chopped
  • 1 small yellow bell pepper, chopped
  • 2 Tablespoons chili powder
  • 0.5 Tablespoon ground cumin
  • 1 Tablespoon chipotle chili powder
  • 1 Teaspoon dried oregano
  • 0.5 Tablespoon smoked paprika
  • Salt and black pepper
  • 0.5 pound ground beef
  • 0.5 pound sausage
  • 0.5 cup beer (Dark, preferably a stout of some kind)
  • 15-ounce can kidney beans, drained and rinsed
  • 12-ounce can crushed tomatoes
  • 12-ounce can diced tomatoes, with juice
  • Hot Sauce to taste
  • Shredded Cheddar
  • Sliced scallions

Instructions

  1. Cook bacon over medium heat until lightly crisp.

  2. Add garlic, onions, bell peppers, and spices.

  3. Cook until vegetables are tender.

  4. Add ground beef and break it up with a wooden spoon.

  5. Once beef is browned, add ground pork.

  6. Cook for approximately 4 minutes.

  7. Stir in beer and beans.

  8. Add crushed and diced tomatoes.

  9. Add hot sauce.

  10. Reduce heat to low and simmer for 1.5 hours.

  11. To serve, top with cheese and sliced scallions, if desired.
