Herb's Chili

Ingredients

  • 3 slices smoked bacon, cut into 1/4-inch pieces
  • 3 cloves garlic, finely chopped
  • 1 medium onion, finely chopped
  • 1 small red bell pepper, chopped
  • 1 small yellow bell pepper, chopped
  • 2 tablespoons chili powder
  • .5 tablespoon ground cumin
  • 1 tablespoon chipotle chili powder
  • 1 teaspoon dried oregano
  • .5 tablespoon smoked paprika
  • Salt and black pepper
  • .5 pound ground beef
  • .5 pound sausage
  • .5 cup beer (Dark, preferably a stout of some kind)
  • (15-ounce) can kidney beans, drained and rinsed
  • (12-ounce) can crushed tomatoes
  • (12-ounce) can diced tomatoes, with juice
  • Hot Sauce to taste
  • Shredded Cheddar
  • Sliced scallions

Instructions

  1. Cook the bacon over medium heat until lightly crisp.

  2. Add the garlic, onions, bell peppers, and spices. Cook until the vegetables are tender.

  3. Add the beef and break it up with a wooden spoon.

  4. Once the beef is brown, add the pork. Let cook for roughly 4 minutes.

  5. Stir in the beer and beans, toss together.

  6. Add the crushed and diced tomatoes.

  7. Add Hot Sauce.

  8. Turn the heat down to low and simmer 1.5 hours.

  9. When serving, top bowl off with cheese, and sliced scallions optional.
